Making a marble cake was probably the fastest way (not necessarily the best way though, in terms of healthiness) to get rid of at least 250g of butter, I thought.

Teochew Png Kueh 潮州饭桃 (peach shaped rice dumpling) is one of my favourite chinese kuehs. It usually comes in either pink or white and is always shaped as a peach. Do you know why? Legend has it that the Monkey God Sun Wu Kong (Journey to the West) stole and ate the peaches of immortality during the royal banquet held by the Jade Emperor in heaven. This cake or kueh/kuih has so many names, that I can't really decide what to put as the title of this post. I made Kuih Talam yesterday. Again, it was my first time making this kuih, although previously I had a little success making Kuih Seri Muka which is similar in nature.

This is one of them. The result is very good, it is soft, fluffy and spongy, a little bit crumbly, just like how a steamed cake would taste like. I cooked this Hokkien Pumpkin Rice on the same day that I made the Pumpkin Kaya Jam, but I only have the time to upload the fotos today. This is what I believe to be a very traditional hokkien household recipe just like cabbage rice. You will never see it served in any restaurants in Singapore or elsewhere, it is only served at home. It's Autumn. 1st thing you notice is that the weather is turning colder, days are getting shorter, and leaves are either turning yellow or dropping like crazy. 

Last year, we enjoyed a modest harvest from our backyard, a total of 3 big pumpkins and 2 courgettes, not a bad start for a beginner. We didn't plant anything this year, except for beans, so nothing to show off. We went to the Bloemencorso yesterday, the annual flower parade held in Loenhout every second sunday of September. I personally prefer the previous Coconut Peach Muffin to this Milk Tea Muffin, but still it is a refreshing taste if you are a tea-drinker like me. For the past 2 months, I have not been baking at all and I suddenly have a whole stockpile of baking supplies which have either expired or nearing their expiry dates. Raisins - expired 31 Dec 10. Dessicated coconut - expired 18 Feb 11. Dried apricots - expired 01 Feb 11. I still have flours and dark chocolate which are expiring in April.

This bread is called American Butter Cheese Bread but I nicknamed it ABC bread, for the fun of it. This recipe was courtesy of my cousin HC. This is my 3rd bread in a week. I just checked my supplies, alas my bread flour is running low. It used to be 5 kilos, now only 200g left. This goes to show that either I am making many breads or I have wasted a lot of flour, LOL. Luckily the sugar and eggs don't get depleted as quickly as the flour, and that is the reason I am so much into this bread-baking than cake-making recently.

Yesterday was my first time making mantou (馒头） or chinese buns. I was doubting whether I should post such a ugly picture. I saw this on one of the chinese recipe magazines that my sister got for free in Singapore. I mean you have to buy it, it cost SGD5 or something but I think she got it for free. I saw this recipe on Kellog's recipe website some time ago and I had always wanted to try it out one day. The original recipe was called "Spicy Crumbed Chicken Strips with Zesty Lemon Dip". I used mayonnaise in place of plain yoghurt for the dip, and hence the title "Spicy Crumbed Chicken Strips with Mayonnaise".

I hate to say this in case anybody thinks I am singing my own praises, but the sandwich bread I baked last night was really good. Finger-licking-good. Soft on the inside yet crunchy at the crust, and no preservatives, and it still tastes good this morning, as good as freshly baked from the bakery.

Yesterday I decided to bake the sweet bread dough again cos I realised I probably didn't do it entirely right the first time for my sausage cheese bread. 

The last time I made the sweet bread dough I made it without a full understanding of how it works. So I went back to the Magic Bread book by Alex Goh and read in his preface that his book primarily focussed on "gelatinized dough". I made this chilli prawn dish （辣椒虾）today, added some "ABC" extra-hot chilli sauce. It was so spicy that my hubby said he can literally spew fire. So we had a fire-spewing dragon at home! Guess it was too spicy for him, I personally felt that it was spicy too. It is interesting to note the ingredients and preparation method that she used in her cookbook. The preparation is always quite elaborate, add ingredients A, B, C, D and E...etc, and this level of details and elaborateness are quite typical for peranakan/straits chinese cooking. I have been cooking pork for 2 days in a row. This is quite rare, cos I have always preferred cooking chicken to pork. That's because I have more chicken recipes than pork recipes, hahaha.
