Easy Mayo Pasta



This is a really simple dish for busy mothers, you can easily whip it up in less than 15 min. It doesn't require any cooking skills, whatsoever. All you need to know is how to cook hardboiled eggs and how to cook pasta til they are al-dente. The ingredients are simple and yet nutritious. This dish can also be eaten cold (just leave it in the fridge) and is especially suitable for hot days.

Here is the recipe from my father-in-law :

Ingredients (for 3-4 persons)
500g pasta (mixture of spirelli and spaghetti)
3 - 4 hardboiled eggs
2 big tomatoes, cut into thin slices
200g ham, cut into small pieces
1 can of  sausages/hotdogs, cut into small pieces
1 can of champignons/button mushrooms
4 tbsp mayonaise
1 tbsp limon juice (optional)


Method
1. Cook the pasta in a big pot of water and let it cook until it is al-dente. At the same time, cook the eggs separately til they are hard-boiled.

2. Drain the pasta and return it to the same pot. Throw in the eggs, tomatoes, ham, hotdogs and button mushrooms.  

3. Add the mayonaise and toss the pasta to make sure the ingredients are thoroughly coated with mayonaise.

Note: The original recipe uses just ham and not hotdogs. I used only canned hotdogs because there is no ham in my fridge. You can add as much mayonaise as you like, so long as the pasta and ingredients are fully coated. If your mayonaise is without lemon juice, then add 1 tbsp lemon juice to give it a tangy flavour.
